Ingredients

Salad

  • 4 cups sliced sugar snapped peas
  • 1 small red onion, minced
  • 1 large red bell pepper, diced
  • ¼ cup fresh cilantro, chopped
  • ¼ cup fresh mint, chopped
  • 3 tablespoons sesame seeds

Dressing

  • ¼ cup rice vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon fresh grated ginger
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • ½ teaspoon miso paste
  • 2 teaspoons honey
  • 1 teaspoon soy sauce
  • 1 tablespoon olive oil

Instructions

  1. Combine all dressing ingredients in a mason jar and shake until well mixed.
  2. In a large salad bowl, mix the sliced sugar snapped peas, red onion, red bell pepper, cilantro, and mint.
  3. Pour the dressing over the salad and toss to coat all ingredients.
  4. Sprinkle sesame seeds on top and toss again.
  5. Serve immediately or refrigerate to serve chilled.
