Carob Banana Chia Vegan Overnight Oats

Ingredients

  • 1 cup Almond milk
  • cup regular oats
  • 1 tbsp carob powder
  • 2 tbsp chia seeds
  • a tiny pinch kosher salt
  • ¼ tsp pure vanilla extract
  • 1-2 tbsp walnuts, chopped (optional)
  • 1 ripe banana, chopped
  • to taste Maple syrup (optional)

Instructions

  1. Mix the dry ingredients (oats, carob powder, chia seeds, optional walnuts, salt) in a bowl.
  2. Pour in the almond milk and vanilla extract, whisk until smooth.
  3. Stir in the chopped banana, mashing some for sweetness.
  4. Refrigerate for at least 1 hour or overnight.
  5. Stir before serving and add maple syrup if desired.
