Ingredients

The base

  • 1 can refried beans
  • 1 tablespoon cooking oil

The vegetables

  • ½ onion diced
  • 1 red bell pepper cored and chopped

The seasonings and salsa

  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder
  • ¾ cup prepared salsa

The toppings

  • cups tortilla chips
  • 2 cups shredded or chopped romaine lettuce
  • 1 can sliced black olives
  • 1 ripe avocado sliced

Miscellaneous

  • 1 can nonstick cooking spray

Instructions

  1. Preheat the oven to 350°F and spray a baking dish with nonstick cooking spray.
  2. Spread the refried beans in an even layer in the baking dish.
  3. Sauté the onion and bell pepper in oil until softened, then stir in the seasonings and salsa.
  4. Transfer the salsa mixture to the baking dish, spreading it over the refried beans.
  5. Bake the casserole for 15 minutes.
  6. Remove from the oven and break tortilla chips over the top.
  7. Add shredded lettuce, black olives, and avocado slices on top, then serve hot.
