Instructions
- 1. Combine all taco seasoning ingredients in a bowl or jar.
- 2. Heat a large skillet over medium heat and add onion, bell pepper, and ground beef, breaking the beef into bits while cooking for about 10-12 minutes until almost browned.
- 3. Preheat the oven to 400°F.
- 4. Rice the cauliflower in a food processor until it resembles cooked quinoa or couscous.
- 5. Drizzle the riced cauliflower with avocado oil, add minced garlic and 1 tablespoon of taco seasoning, and mix well.
- 6. In a separate bowl, mix mayo (or coconut yogurt), salsa, and nutritional yeast.
- 7. Once the beef is nearly cooked, stir in the remaining taco seasoning and finish cooking.
- 8. In a 9x13 casserole dish, combine the cooked beef, cauli rice, mayo mixture, and olives, mixing well.
- 9. Bake in the oven for 15 minutes or until heated through.
- 10. Prepare toppings while the casserole is baking, then serve the casserole topped with your desired toppings.
