Ingredients

The casserole

  • 1 tbsp Avocado oil
  • 2 lb Ground beef
  • ¾ cup Water
  • ¼ cup Taco seasoning
  • 2 large Bell peppers (diced)
  • ¼ large Onion (diced)
  • 2 10-oz cans Diced tomatoes with green chilies (drained)
  • 1 cup Cheddar cheese (shredded)

Optional toppings

  • to taste Iceberg lettuce (shredded)
  • to taste Fresh tomatoes (diced)
  • to taste Avocados (cubed)
  • to taste Fresh cilantro (chopped)
  • to taste Sour cream

Instructions

  1. Heat avocado oil in a large skillet over medium-high heat and brown the ground beef.
  2. Add water and taco seasoning to the beef, bring to a boil, then simmer until thickened.
  3. Transfer the beef mixture to a slow cooker or large baking dish.
  4. Add diced bell peppers, onion, and drained tomatoes to the beef mixture and mix well.
  5. For the slow cooker, cover and cook on low for 4 hours or high for 2-3 hours. For the oven, bake at 375°F (190°C) for 20-30 minutes until hot and bubbly.
  6. If using a slow cooker, stir the casserole before serving, then sprinkle cheese on top and cook until melted.
  7. Top with optional toppings before serving.
