Instructions
- Heat avocado oil in a large skillet over medium-high heat and brown the ground beef.
- Add water and taco seasoning to the beef, bring to a boil, then simmer until thickened.
- Transfer the beef mixture to a slow cooker or large baking dish.
- Add diced bell peppers, onion, and drained tomatoes to the beef mixture and mix well.
- For the slow cooker, cover and cook on low for 4 hours or high for 2-3 hours. For the oven, bake at 375°F (190°C) for 20-30 minutes until hot and bubbly.
- If using a slow cooker, stir the casserole before serving, then sprinkle cheese on top and cook until melted.
- Top with optional toppings before serving.
