Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 2 ¼ tablespoons taco seasoning
  • 2/3 cup water
  • 2 ¾ cups salsa
  • 6 pieces keto tortillas (cut in half)
  • 3 cups shredded cheese (Mexican cheese blend)

Instructions

  1. Preheat the oven to 180C/350F and grease a 9 x 13-inch baking dish.
  2. In a non-stick pan, heat the olive oil and cook the ground beef until browned. Drain excess liquid.
  3. Add taco seasoning and water to the beef and simmer for 5 minutes until thickened. Stir in the salsa.
  4. Layer half of the sliced tortillas in the baking dish, followed by half of the beef mixture and half of the shredded cheese.
  5. Add the remaining tortillas, beef mixture, and top with the remaining cheese.
  6. Cover with tin foil and bake for 15-20 minutes until the cheese melts.
  7. Let the casserole sit for 5 minutes before serving.
