Instructions
- Cook cauliflower rice in a skillet with avocado oil and sea salt.
- Stir in drained diced tomatoes and transfer to a casserole dish.
- Sauté bell peppers and onions in oil until soft, then season with salt and pepper.
- Layer the vegetables over the cauliflower rice, then spread sour cream on top.
- Preheat the oven to 400°F (204°C).
- Brown the ground beef in the skillet, breaking it apart as it cooks.
- Add water and taco seasoning to the beef, bring to a boil, then simmer until thickened.
- Spread the beef mixture over the casserole, then top with shredded cheese.
- Bake until the casserole is hot and the cheese is melted.
