Ingredients

Cauliflower Rice

  • 1 tbsp Avocado oil
  • 4 cups Cooked cauliflower rice
  • ½ tsp Sea salt
  • 1 10-oz can Diced tomatoes with green chilies (drained very well)

Vegetables

  • 1 tbsp Avocado oil
  • 2 large Bell peppers (diced)
  • ½ large Onion (diced)
  • to taste Sea salt
  • to taste Black pepper
  • 1 cup Sour cream

Taco Meat

  • 2 lb Ground beef
  • ¾ cup Water
  • ¼ cup Taco seasoning

Cheese Topping

  • 2 cups Mexican cheese blend (shredded)

Optional Toppings

  • to taste Tomatoes (diced)
  • to taste Jalapenos (sliced)
  • to taste Avocados (sliced)
  • to taste Fresh cilantro (chopped)

Instructions

  1. Cook cauliflower rice in a skillet with avocado oil and sea salt.
  2. Stir in drained diced tomatoes and transfer to a casserole dish.
  3. Sauté bell peppers and onions in oil until soft, then season with salt and pepper.
  4. Layer the vegetables over the cauliflower rice, then spread sour cream on top.
  5. Preheat the oven to 400°F (204°C).
  6. Brown the ground beef in the skillet, breaking it apart as it cooks.
  7. Add water and taco seasoning to the beef, bring to a boil, then simmer until thickened.
  8. Spread the beef mixture over the casserole, then top with shredded cheese.
  9. Bake until the casserole is hot and the cheese is melted.
