Keto Cheeseburger Casserole

Ingredients

Base Layer

  • 1 tbsp Avocado oil
  • 1 large head Cauliflower
  • ½ tsp Sea salt
  • 1 cup Cheddar cheese (shredded)
  • ¼ cup Heavy cream

Beef Layer

  • 2 lb Ground beef
  • 2 tsp Sea salt
  • ½ tsp Black pepper

Topping

  • ½ cup Sugar-free ketchup
  • 2 tbsp Mustard
  • 1 cup Cheddar cheese (shredded)

Instructions

  1. Rice the cauliflower using a food processor or box grater.
  2. Heat the oil in a large saute pan over medium-high heat, add the cauliflower rice and sea salt, and stir fry until cooked and browned.
  3. Remove from heat and stir in cheddar cheese and heavy cream.
  4. Transfer the mixture to a glass casserole dish.
  5. Preheat the oven to 400°F (204°C).
  6. In the same pan, cook the ground beef with sea salt and black pepper until browned, then drain excess grease.
  7. Sprinkle the ground beef over the cauliflower mixture in the casserole dish.
  8. Drizzle with ketchup and mustard, then sprinkle with shredded cheese.
  9. Bake for about 10 minutes until hot and cheese is melted.
