Ingredients

Blueberry Filling

  • 4 cups fresh or frozen blueberries

  • 1 tablespoon cornstarch
  • 1 tablespoon water

Topping

  • 1 cup rolled oats
  • ¼ cup brown sweetener
  • ½ teaspoon cinnamon
  • 3 tablespoons melted butter

Instructions

  1. Preheat the oven to 350 degrees.
  2. Grease an 8×8 baking dish.
  3. In a mixing bowl, combine blueberries, cinnamon, vanilla, sweetener, and lemon juice.
  4. In a small bowl, mix cornstarch and water, then add to the blueberry mixture and stir.
  5. Transfer the blueberry mixture to the bottom of the baking dish.
  6. In a separate bowl, combine oats, brown sweetener, cinnamon, and melted butter.
  7. Spread the topping evenly over the blueberry mixture.
  8. Bake for 25-30 minutes until the topping is crunchy and golden brown.
  9. Cool before serving.
