Ingredients

The crisp topping

  • 1 cup flour
  • 1 cup rolled old-fashioned oats
  • cup dark brown sugar
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon coarse salt
  • 6 tablespoons cold butter, cubed

The berry filling

  • 4 cups mixed blueberries, blackberries and raspberries
  • 2 cups chopped strawberries
  • cup granulated sugar
  • Zest and juice of ½ medium lemon
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons cornstarch

To serve

  • 1 pint vanilla bean ice cream (optional)

Instructions

  1. Preheat the oven to 375°F and coat a baking dish or ramekins with cooking spray.
  2. In a food processor, combine flour, oats, brown sugar, cinnamon, salt, and butter, pulsing while adding ice water until clumps form.
  3. In a mixing bowl, combine berries, sugar, lemon juice, vanilla extract, and cornstarch, then transfer to the baking dish.
  4. Crumble the oatmeal mixture over the berry layer.
  5. Bake for 30-40 minutes until the crust is browned and berries are bubbly.
  6. Serve warm with vanilla bean ice cream if desired.
