Instructions
- Preheat the oven to 375°F and coat a baking dish or ramekins with cooking spray.
- In a food processor, combine flour, oats, brown sugar, cinnamon, salt, and butter, pulsing while adding ice water until clumps form.
- In a mixing bowl, combine berries, sugar, lemon juice, vanilla extract, and cornstarch, then transfer to the baking dish.
- Crumble the oatmeal mixture over the berry layer.
- Bake for 30-40 minutes until the crust is browned and berries are bubbly.
- Serve warm with vanilla bean ice cream if desired.
