Peach Halloumi Sandwich

Ingredients

  • 8 ounces halloumi
  • 2 small peaches
  • 1 medium cucumber
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili garlic sauce
  • 1 teaspoon honey
  • ¼ teaspoon kosher salt
  • 2 pieces ciabatta
  • as needed none olive oil
  • optional none mayonnaise
  • 2 handfuls arugula

Instructions

  1. Slice the peaches and halloumi, keeping the skin on the peaches.
  2. Prepare the cucumber by removing the seeds and slicing it into ¼-inch pieces, then mash them slightly.
  3. Mix the cucumber with rice vinegar, chili garlic sauce, honey, and salt, adjusting to taste.
  4. Heat a grill pan and grill the peaches and halloumi until charred.
  5. Drizzle olive oil on ciabatta slices and toast them on the grill pan.
  6. Optionally spread mayonnaise on ciabatta, then layer with cucumber salad, peaches, halloumi, and arugula.
