Instructions
- Slice the peaches and halloumi, keeping the skin on the peaches.
- Prepare the cucumber by removing the seeds and slicing it into ¼-inch pieces, then mash them slightly.
- Mix the cucumber with rice vinegar, chili garlic sauce, honey, and salt, adjusting to taste.
- Heat a grill pan and grill the peaches and halloumi until charred.
- Drizzle olive oil on ciabatta slices and toast them on the grill pan.
- Optionally spread mayonnaise on ciabatta, then layer with cucumber salad, peaches, halloumi, and arugula.
