Grilled Peach and Haloumi Salad

Ingredients

  • 2 to 3 pieces yellow peaches
  • 12 ounces haloumi cheese
  • 1 cup arugula
  • 1 teaspoon olive oil
  • to taste salt
  • ¼ cup balsamic vinegar
  • 6 to 8 slices prosciutto

Instructions

  1. Cut the peaches in half, remove the seeds, and slice them into ½-inch pieces.
  2. Slice the haloumi cheese into rectangles.
  3. Preheat the grill or grill pan over high heat and grease it with cooking spray.
  4. In a small bowl, combine the arugula with olive oil and salt, rubbing the leaves to coat.
  5. In a small saucepan, simmer the balsamic vinegar over medium heat until it reduces by half, then set aside to thicken.
  6. Grill the peach slices for about 1 minute on one side and 30 seconds on the other, pressing lightly for grill marks.
  7. Grill the haloumi for about 2 minutes per side, placing a flat lid or plate on top to get good grill marks.
  8. Arrange the grilled peaches, haloumi, dressed arugula, and prosciutto on a plate, and drizzle with balsamic glaze.
