Grilled Peach and Haloumi Salad

Instructions
- Cut the peaches in half, remove the seeds, and slice them into ½-inch pieces.
- Slice the haloumi cheese into rectangles.
- Preheat the grill or grill pan over high heat and grease it with cooking spray.
- In a small bowl, combine the arugula with olive oil and salt, rubbing the leaves to coat.
- In a small saucepan, simmer the balsamic vinegar over medium heat until it reduces by half, then set aside to thicken.
- Grill the peach slices for about 1 minute on one side and 30 seconds on the other, pressing lightly for grill marks.
- Grill the haloumi for about 2 minutes per side, placing a flat lid or plate on top to get good grill marks.
- Arrange the grilled peaches, haloumi, dressed arugula, and prosciutto on a plate, and drizzle with balsamic glaze.
