Ingredients

Honey Mustard Chicken

  • 1 lb boneless skinless chicken breast
  • 3 tablespoons raw honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 clove garlic, minced
  • ½ teaspoon thyme
  • teaspoon red pepper flakes
  • teaspoon black pepper
  • teaspoon salt

Salad Ingredients

  • 6 cups chopped romaine lettuce
  • 1 whole roasted red pepper, sliced
  • 1 whole red onion, cut into 1" rings
  • 2 ears sweet corn, shucked
  • 1 cup cherry or grape tomatoes, halved
  • 1 whole avocado, sliced

Instructions

  1. Combine honey, apple cider vinegar, olive oil, dijon mustard, whole grain mustard, garlic, thyme, red pepper flakes, black pepper, and salt in a bowl and whisk until blended.
  2. Marinate the chicken in ⅓ of the dressing for at least 30 minutes, reserving the rest for dressing.
  3. Preheat the grill to medium high heat (375-400°F).
  4. Grill the onion rings for 4-5 minutes until charred, flipping halfway. Grill corn for 2-3 minutes on each side until charred.
  5. Grill the marinated chicken for 4-7 minutes per side until cooked through.
  6. Let the chicken rest for 5 minutes, then slice.
  7. Assemble the salad by combining romaine lettuce, sliced chicken, grilled onion, corn kernels, roasted red pepper, tomatoes, and avocado in a large bowl. Drizzle with dressing and serve.
