Peanut Butter Banana Chickpea Cookies

chickpeas, very well rinsed and drained

creamy peanut butter

very overripe banana

vanilla extract

coconut sugar

chocolate chips
Instructions
- Preheat the oven to 350°F and prepare a baking sheet.
- Rinse the chickpeas thoroughly and drain well, then place them in a food processor.
- Add the remaining ingredients (except chocolate chips) to the food processor and blend until very smooth.
- Stir in the chocolate chips by hand.
- Using wet hands, scoop the batter onto the baking sheet and shape into cookies.
- Bake for 10-12 minutes until set.
- Allow the cookies to cool and then store them in the refrigerator.
