Peanut Butter Chocolate Chickpea Bars

Ingredients

The bars

  • 1 15-ounce can chickpeas, drained (reserve liquid)
  • cup peanut butter, creamy
  • 2 tablespoons vegetable oil
  • cup pure maple syrup
  • 1 teaspoon vanilla extract
  • ¾ cup white whole wheat flour
  • 1 teaspoon baking powder
  • ½ cup coarsely chopped peanuts
  • ¾ cup dairy-free dark chocolate chips

Garnish (optional)

  • to taste chopped peanuts
  • to taste dark chocolate chips or chunks

Instructions

  1. Preheat the oven to 350°F.
  2. Drain the chickpeas, reserving the liquid, and whip the reserved liquid until thick and foamy.
  3. In a food processor, blend chickpeas, peanut butter, vegetable oil, maple syrup, and vanilla until smooth.
  4. Combine the chickpea mixture with the whipped liquid, then gently fold in flour and baking powder until smooth.
  5. Fold in peanuts and chocolate chips carefully.
  6. Spray a 9 x 9-inch baking dish with nonstick spray and pour in the batter.
  7. Bake for 50-60 minutes until golden brown and firm.
  8. Let cool for 15 minutes before slicing into 16 bars.
