Chickpea Brownies

Ingredients

  • 1 15oz can chickpeas, drained and rinsed
  • ½ cup nut butter (almond or peanut)
  • ½ cup maple syrup
  • 1 Tbsp melted coconut oil
  • 1 tsp vanilla
  • ¼ cup almond flour
  • ¼ cup cocoa powder
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Blend chickpeas, nut butter, maple syrup, coconut oil, and vanilla in a food processor.
  3. Add almond flour, cocoa powder, baking soda, baking powder, and salt to the mixture and blend until smooth.
  4. Stir in the chocolate chips without processing them.
  5. Pour the batter into a greased 8x8 pan and sprinkle with extra chocolate chips if desired.
  6. Bake for 21-23 minutes.
