Chickpea Blondies

Ingredients

  • 1 ½ cups canned chickpeas, drained and rinsed
  • cup creamy no stir nut butter or sunflower seed butter
  • cup honey or maple syrup
  • cup raw cane sugar or sugar substitute
  • cup gluten free oat flour
  • ¼ teaspoon kosher salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 3 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ cup dairy free white chocolate chips or butterscotch chips

Instructions

  1. Preheat the oven to 350°F and line an 8x8 pan with parchment paper.
  2. Drain and rinse the chickpeas under cold water.
  3. In a food processor, combine the chickpeas, nut butter, and maple syrup; process until smooth.
  4. In a large mixing bowl, sift together the sugar, oat flour, baking soda, baking powder, cinnamon, and salt.
  5. Add the chickpea mixture to the dry ingredients along with the vanilla extract and chocolate chips; mix until combined.
  6. Spread the batter evenly in the prepared pan and sprinkle with sea salt and cinnamon.
  7. Bake for 25-30 minutes until a knife inserted comes out clean and edges are golden brown.
