Chickpea Blondies

Instructions
- Preheat the oven to 350°F and prepare an 8-inch-square baking pan.
- Pulse the oats in a food processor until ground, then add chickpeas, peanut butter, coconut oil, vanilla, and maple extract and process until smooth.
- Add maple syrup, cinnamon, baking powder, baking soda, and salt to the mixture and blend until thick and smooth.
- If the mixture is warm, let it cool slightly before adding chocolate chips and any additional mix-ins.
- Scrape the batter into the prepared pan, smooth the top, and sprinkle reserved chocolate chips and mix-ins on top.
- Bake for 18 minutes until the top lightly cracks and a toothpick comes out clean.
- Let the bars cool in the pan, then lift out, slice, and enjoy.
