Double Fudge Chickpea Brownies

Ingredients

  • 1 15 ounce can chickpeas
  • ¾ cup peanut butter
  • cup maple syrup
  • 3 tablespoons unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • 3 tablespoons milk of choice
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Drain and rinse the chickpeas, saving the liquid.
  3. In a food processor, combine chickpeas, peanut butter, maple syrup, cocoa powder, vanilla, baking powder, and baking soda. Pulse until thick batter forms.
  4. Add milk and pulse until smooth.
  5. Fold in chocolate chips.
  6. Grease a 9×4 loaf pan or an 8×8 square pan and transfer the batter into it.
  7. Sprinkle remaining chocolate chips on top.
  8. Bake for 30-35 minutes until a toothpick comes out clean.
  9. Let cool for 10 minutes before slicing and serving.
