Peanut Butter Banana Cookies

Ingredients

  • ¾ cup coconut sugar or light brown sugar
  • 1 large egg
  • cup mashed ripe banana (about 1 medium/large)
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • 1 cup creamy peanut butter
  • ½ cup bittersweet chocolate chips (60% cacao)
  • to taste optional flaky salt (such as Maldon or fleur de sel)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together coconut sugar and egg until combined.
  3. Add mashed banana, vanilla, cinnamon, and salt, whisking until smooth.
  4. Stir in the peanut butter until the mixture is evenly combined.
  5. Fold in the chocolate chips and refrigerate the dough for 30 minutes.
  6. Scoop the dough into tablespoon-sized mounds on the prepared baking sheet, leaving space between each.
  7. Sprinkle with flaky salt if desired.
  8. Bake for 11 to 12 minutes until the edges are golden but the centers look underdone.
  9. Let cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
