Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, baking powder, cornstarch, salt, baking soda, and cinnamon.
- In a separate bowl, cream the butter and brown sugar until light and fluffy.
- Add the peanut butter, egg, mashed banana, and vanilla to the creamed mixture and mix until combined.
- Fold in the dry ingredients until just combined.
- Scoop rounded tablespoonfuls of dough, roll into balls, and place on the baking sheet.
- Use a fork to create a criss-cross pattern on top of each ball and sprinkle with cane sugar if desired.
- Bake for 8-10 minutes until slightly golden around the edges.
- Allow to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
