Ingredients

The cookie dough

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon cornstarch
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ½ cup butter, softened
  • ½ cup brown sugar, packed
  • ½ cup creamy natural peanut butter
  • 1 large egg
  • ½ cup mashed banana (about 1 medium banana)
  • 1 teaspoon vanilla extract

For sprinkling (optional)

  • to taste cane sugar

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, cornstarch, salt, baking soda, and cinnamon.
  3. In a separate bowl, cream the butter and brown sugar until light and fluffy.
  4. Add the peanut butter, egg, mashed banana, and vanilla to the creamed mixture and mix until combined.
  5. Fold in the dry ingredients until just combined.
  6. Scoop rounded tablespoonfuls of dough, roll into balls, and place on the baking sheet.
  7. Use a fork to create a criss-cross pattern on top of each ball and sprinkle with cane sugar if desired.
  8. Bake for 8-10 minutes until slightly golden around the edges.
  9. Allow to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
