Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup butter, softened
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. Sift together the flour, salt, baking soda, and baking powder in a bowl.
  3. In a mixer, cream together the butter, brown sugar, and granulated sugar until fluffy.
  4. Add the peanut butter and mix until incorporated.
  5. Mix in the vanilla and then add the eggs one at a time, mixing well after each addition.
  6. Gradually add the flour mixture until just combined.
  7. Roll dough into 1 ½-inch balls and place on baking sheets, spacing them apart.
  8. Use a fork to create a crosshatch pattern on each cookie.
  9. Bake for 12-17 minutes until edges are golden and centers are puffy.
  10. Let cookies cool on the baking sheets for 10 minutes before transferring to a wire rack.
