Ingredients

The cookie dough

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • ¾ cup packed light or dark brown sugar
  • 2 large eggs
  • 2 cups creamy peanut butter
  • teaspoons pure vanilla extract

For rolling

  • ½ cup granulated sugar

Optional

  • ½ cup finely chopped peanuts

Instructions

  1. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  2. Cream the butter and both sugars together until smooth, then add the eggs and mix well.
  3. Incorporate the peanut butter and vanilla, mixing until combined.
  4. Gradually add the dry ingredients to the wet mixture and mix until combined.
  5. Chill the dough for at least 1 hour in the refrigerator.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Roll the dough into balls, coat in granulated sugar, and make a crisscross pattern on top.
  8. Bake for 10-12 minutes until lightly browned, then cool on the baking sheets.
