Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a medium mixing bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a stand mixer, cream the butter and sugars until light and fluffy.
- Add the peanut butter and mix until creamy.
- Incorporate the egg and vanilla, mixing until well blended.
- Gradually add the flour mixture to the peanut butter mixture on low speed until just combined.
- Scoop the dough into balls and place them on the baking sheets, spacing them 2 inches apart.
- Flatten the cookies slightly with a fork to create a crisscross pattern.
- Bake in the preheated oven for 9-10 minutes until pale and slightly under-baked.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
