Ingredients

  • ½ cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • cup peanut butter
  • 3 tablespoons unsalted butter
  • 3 tablespoons brown sugar
  • 2 tablespoons granulated sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet.
  2. In a small bowl, whisk together the flour, baking soda, and salt.
  3. In a medium bowl, combine the peanut butter, softened butter, brown sugar, granulated sugar, egg yolk, and vanilla, whisking until smooth.
  4. Stir the dry ingredients into the wet mixture until just combined.
  5. Scoop rounded spoonfuls of dough, roll into balls, and place on the prepared cookie sheet, pressing a fork into each to create a crosshatch pattern.
  6. Bake for 8 to 11 minutes until the edges are set but the cookies remain pale.
  7. Cool on the baking sheet for at least 10 minutes before moving.
