Ingredients

The dough

  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ cup unsalted butter
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract

For rolling

  • ½ cup granulated sugar

Instructions

  1. Preheat the oven to 350°F and line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a stand mixer, beat the butter, brown sugar, and ¼ cup granulated sugar until light and fluffy.
  4. Add the peanut butter, egg, and vanilla, mixing until creamy.
  5. Gradually add the dry ingredients and mix on low speed until just combined.
  6. Scoop slightly heaping tablespoons of dough, roll into balls, and roll in the ½ cup granulated sugar.
  7. Arrange the dough balls on the prepared baking sheets, leaving at least 2 inches between them.
  8. Press down on the tops of the balls with a fork to form a cross-hatch pattern.
  9. Bake one sheet at a time for 10 to 12 minutes, allowing to cool on the baking sheet for 10 minutes before transferring to a wire rack.
