Ingredients

  • 3 oz unsalted butter
  • 2.3 oz fine sugar or caster sugar
  • 2.3 oz brown sugar
  • 1 large egg
  • 8 oz creamy and salted peanut butter
  • 6 oz all-purpose flour
  • ½ tsp baking soda

Instructions

  1. Preheat the oven to 180°C (356°F) and line two baking sheets with parchment paper.
  2. Beat the butter and both sugars together until light and fluffy.
  3. Add the egg and continue to beat until well combined.
  4. Mix in the peanut butter until creamy.
  5. Gently fold in the flour and baking soda until a dough forms.
  6. Divide the dough into 40 balls and use a fork to create a crisscross pattern on each cookie.
  7. Bake in the oven for 15 to 18 minutes, or until the cookies are slightly golden brown.
  8. Let the cookies cool, then store them in an airtight container for up to a week.
