Ingredients

The dough

  • 6 Tbsp. unsalted butter
  • ¾ cup all-purpose flour
  • ¾ tsp. Diamond Crystal kosher salt
  • ½ tsp. Morton’s kosher salt
  • ½ tsp. baking powder
  • ¼ tsp. baking soda
  • 1 large egg
  • 1 large egg yolk
  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • ¼ cup water
  • 1 16-oz. jar all-natural creamy peanut butter

For sprinkling

  • to taste demerara or raw sugar
  • to taste flaky sea salt

For roasting

  • ½ cup roasted, salted peanuts

Instructions

  1. Preheat the oven to 350°F and toast the peanuts until browned and fragrant.
  2. Brown the butter in a skillet and let it cool until it begins to solidify.
  3. Mix the dry ingredients in one bowl and beat the egg, sugars, and water in another bowl until light.
  4. Combine the wet and dry ingredients, then add the peanut butter, chopped peanuts, and brown butter.
  5. Form the dough into balls, flatten them with a fork, and chill for 1 hour.
  6. Preheat the oven to 375°F, sprinkle cookies with sugar and salt, and bake until browned.
  7. Cool the cookies on a wire rack.
