Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- Cream together the room temperature butter and sugars in a mixing bowl until light and fluffy.
- Mix in the egg, peanut butter, molasses, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt, then mix into the wet ingredients gradually.
- Measure out portions of cookie dough, roll them into balls, and coat in granulated sugar.
- Transfer the cookies to the baking sheet, leaving space between them, and press a crosshatch pattern on top.
- Bake for 10-12 minutes until the edges are set, then let cool on a rack.
