Ingredients

  • ½ cup unsalted butter, softened at room temperature

  • ½ cup peanut butter
  • teaspoons molasses
  • ½ teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 tablespoons all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon table salt

Instructions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. Cream together the room temperature butter and sugars in a mixing bowl until light and fluffy.
  3. Mix in the egg, peanut butter, molasses, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt, then mix into the wet ingredients gradually.
  5. Measure out portions of cookie dough, roll them into balls, and coat in granulated sugar.
  6. Transfer the cookies to the baking sheet, leaving space between them, and press a crosshatch pattern on top.
  7. Bake for 10-12 minutes until the edges are set, then let cool on a rack.
