Instructions
- Whisk together the flour, baking powder, baking soda, and salt in a bowl and set aside.
- Cream the softened butter and both sugars together until smooth, then add the eggs and beat until combined.
- Mix in the peanut butter and vanilla until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, mixing until combined, then fold in the white chocolate chips.
- Chill the dough in the refrigerator for 1 hour.
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Roll the dough into large balls and optionally roll in granulated sugar before placing them on the baking sheets.
- Slightly flatten each ball and bake for 14-15 minutes until lightly browned on the edges.
- Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack.
