Ingredients

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • ¾ cup packed light brown sugar
  • 2 large eggs
  • 2 cups creamy peanut butter
  • teaspoons pure vanilla extract
  • 1⅔ cups white chocolate chips
  • ½ cup granulated sugar (for rolling, optional)

Instructions

  1. Whisk together the flour, baking powder, baking soda, and salt in a bowl and set aside.
  2. Cream the softened butter and both sugars together until smooth, then add the eggs and beat until combined.
  3. Mix in the peanut butter and vanilla until fully incorporated.
  4. Gradually add the dry ingredients to the wet mixture, mixing until combined, then fold in the white chocolate chips.
  5. Chill the dough in the refrigerator for 1 hour.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Roll the dough into large balls and optionally roll in granulated sugar before placing them on the baking sheets.
  8. Slightly flatten each ball and bake for 14-15 minutes until lightly browned on the edges.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack.
