Instructions
- Melt the chocolate, butter, and peanut butter together.
- Beat together the sugar, eggs, vanilla extract, and espresso powder.
- Stir in the melted chocolate mixture, baking powder, and salt.
- Mix in the flour until just combined, then cover and chill the dough for at least 3 hours or overnight.
- Preheat the oven and prepare a baking sheet with parchment paper.
- Scoop the dough and roll into balls, then coat in powdered sugar.
- Bake the cookies until the tops are dry and just set, rotating the pan halfway through.
- Let cool slightly on the baking sheet before transferring to a wire rack.
