Ingredients

The dough

  • 8 ounces chopped bittersweet chocolate or chocolate chips
  • ¼ cup unsalted butter
  • ¼ cup creamy peanut butter
  • cup granulated sugar
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 ¼ teaspoons instant espresso powder
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup all purpose flour
  • cup white whole wheat flour or additional all purpose flour

For coating

  • 1-2 cups powdered sugar

Instructions

  1. Melt the chocolate, butter, and peanut butter together.
  2. Beat together the sugar, eggs, vanilla extract, and espresso powder.
  3. Stir in the melted chocolate mixture, baking powder, and salt.
  4. Mix in the flour until just combined, then cover and chill the dough for at least 3 hours or overnight.
  5. Preheat the oven and prepare a baking sheet with parchment paper.
  6. Scoop the dough and roll into balls, then coat in powdered sugar.
  7. Bake the cookies until the tops are dry and just set, rotating the pan halfway through.
  8. Let cool slightly on the baking sheet before transferring to a wire rack.
