The chocolate dip

Instructions
- Preheat the oven to 375°F and line 3 baking sheets with parchment paper.
- Cream together the shortening, peanut butter, and sugars until light and fluffy.
- Add vanilla and eggs, mixing until combined.
- In a separate bowl, whisk together flour, baking soda, and salt, then add to the dough and mix until combined.
- Scoop out dough using a ¼ cup cookie scoop, roll in sugar, and flatten on the cookie sheet.
- Bake for 9-13 minutes until puffed and set, then cool on the baking sheet.
- Once cooled, melt chocolate and oil or shortening in the microwave.
- Dip half of each cookie in the melted chocolate and place on parchment paper to cool completely.
