Ingredients

The cookie dough

  • 1 ripe banana mashed
  • ½ cup peanut butter
  • ¼ cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon baking soda
  • cups rolled oats

Optional add-ins

  • ¼ cup mini chocolate chips
  • ¼ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mash the ripe banana until smooth.
  3. Add peanut butter, maple syrup, vanilla extract, cinnamon, and baking soda to the mashed banana and stir until well combined.
  4. Stir in the rolled oats until a thick dough forms.
  5. If desired, fold in the mini chocolate chips and chopped walnuts.
  6. Drop spoonfuls of dough onto the prepared baking sheet, flattening each slightly.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
