Instructions
- Preheat the oven to 325°F and line two baking sheets with parchment paper.
- Measure honey and peanut butter together in a measuring cup.
- Combine honey and peanut butter in a mixing bowl with mashed banana and melted butter, whisking until blended.
- Beat in the egg, then whisk in vanilla, baking soda, baking powder, salt, and cinnamon.
- Stir in ground oats, rolled oats, chocolate chips, and sprinkles until combined.
- Drop dough by heaping tablespoons onto prepared baking sheets.
- Bake for about 16 minutes, swapping the pans halfway through, until cookies are barely set and golden around the edges.
- Let cookies cool completely on the pans and sprinkle with flaky sea salt if desired.
