Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- In a bowl, mix the softened butter and coconut sugar until combined.
- Add the egg and vanilla extract, mixing well.
- Stir in the chickpea flour, baking soda, and salt until the batter is uniform.
- Fold in the chocolate chips.
- Scoop the dough onto the prepared baking sheet, spacing them 1 to 2 inches apart.
- Bake for 8 to 10 minutes until the edges are lightly golden.
- Allow the cookies to cool on the pan to firm up.
