Ingredients

  • cups cooked chickpeas
  • ½ cup gluten-free oat flour
  • ¾ cup coconut sugar
  • 3 tablespoons melted coconut oil
  • 1 tablespoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon raw apple cider vinegar
  • ¾ cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a food processor, blend the chickpeas, coconut oil, and vanilla until smooth.
  3. Add the coconut sugar, oat flour, salt, baking soda, and vinegar, and blend until a smooth batter forms.
  4. Fold in the chocolate chips briefly until incorporated.
  5. Drop heaping tablespoons of dough onto the lined baking sheet and flatten slightly with wet fingers.
  6. Bake for 18 to 20 minutes until the tops crack and edges are dry.
  7. Cool completely before serving.
