Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a food processor, blend the chickpeas, coconut oil, and vanilla until smooth.
- Add the coconut sugar, oat flour, salt, baking soda, and vinegar, and blend until a smooth batter forms.
- Fold in the chocolate chips briefly until incorporated.
- Drop heaping tablespoons of dough onto the lined baking sheet and flatten slightly with wet fingers.
- Bake for 18 to 20 minutes until the tops crack and edges are dry.
- Cool completely before serving.
