Soy Maple Potatoes and Chicken in Slow Cooker

Ingredients

The chicken

  • pounds chicken drumsticks
  • pounds bone-in, skin-on chicken thighs

The vegetables

  • pounds sweet potatoes (cut into 1" thick wedges)

The sauce

  • ½ cup chicken broth
  • cup pure maple syrup
  • 2 tablespoons soy sauce
  • 2 tablespoons sriracha
  • ½ teaspoon salt

The cooking fats

  • 2 tablespoons butter (or olive oil)

The thickening agent

  • 2 tablespoons whole-wheat flour

Instructions

  1. Prepare the chicken by removing excess skin and place it in the slow cooker.
  2. Layer the sweet potato wedges on top of the chicken.
  3. Whisk together chicken broth, maple syrup, soy sauce, sriracha, and salt, then pour over the chicken and sweet potatoes.
  4. Cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken is tender.
  5. Preheat the oven broiler to high and strain the cooking liquid, skimming off any fat.
  6. In a small pot, heat butter or olive oil, whisk in flour, and cook until browned.
  7. Add the cooking liquid and boil until reduced by half into a glaze.
  8. Transfer chicken and sweet potatoes to a baking sheet, brush with the glaze, and broil until bubbly and dark brown.
