Crock Pot Bourbon Chicken

Ingredients

The chicken and marinade

  • pounds boneless skinless chicken thighs
  • ½ cup low sodium soy sauce or tamari
  • 3 tablespoons apple cider vinegar
  • ¼ cup bourbon
  • 3 tablespoons brown sugar
  • 2 tablespoons pure maple syrup
  • 5 cloves crushed garlic
  • 1 tablespoon minced fresh ginger
  • ¼ teaspoon ground black pepper
  • 2 tablespoons cornstarch

For serving

  • ¼ cup chopped green onions
  • 2 cups prepared brown rice

Instructions

  1. Mix the soy sauce, apple cider vinegar, bourbon, brown sugar, maple syrup, garlic, ginger, and black pepper in a bowl.
  2. Place the chicken in a shallow dish and pour the marinade over it. Cover and refrigerate for a few hours or overnight.
  3. Coat the slow cooker with cooking spray and place the marinated chicken inside. Pour the marinade over the chicken.
  4. Cook on LOW for 6-7 hours or on HIGH for 2 ½ to 3 hours until the chicken is tender.
  5. Remove the chicken and strain the cooking liquid into a saucepan.
  6. Whisk cornstarch with water to create a slurry and add it to the saucepan. Heat and stir until the sauce thickens.
  7. Pour the thickened sauce over the chicken, sprinkle with green onions, and serve with rice.
