Ingredients

The chicken

  • 2 lbs boneless skinless chicken thighs, cut into 1 inch pieces
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper
  • 1 teaspoon minced garlic

The sauce

  • ¼ cup bourbon
  • ¼ cup brown sugar
  • 2 tablespoons ketchup
  • 1 teaspoon apple cider vinegar
  • ½ cup water
  • cup low sodium soy sauce
  • 1 tablespoon cornstarch

Garnish

  • 2 tablespoons sliced green onions (optional)

Instructions

  1. Heat oil in a large pan over medium-high heat.
  2. Season the chicken with salt and pepper, then cook for 4-5 minutes on each side until golden brown.
  3. Add garlic to the pan and cook for 30 seconds.
  4. In a medium bowl, whisk together bourbon, brown sugar, ketchup, apple cider vinegar, water, soy sauce, and cornstarch.
  5. Pour the sauce over the chicken and bring to a boil.
  6. Reduce heat to low and simmer for 3-5 minutes until the sauce thickens.
  7. Sprinkle with green onions and serve immediately, preferably over rice.
