Ingredients

The chicken

  • 2 pounds skinless, boneless chicken thighs
  • 1-2 tablespoons oil

The sauce

  • 1 tablespoon Bourbon (or broth)
  • ¼ cup reduced-sodium soy sauce
  • 1 tablespoon ketchup
  • 1 teaspoon apple cider vinegar
  • ¾ cup chicken stock
  • 2 tablespoons cornstarch
  • 2 tablespoons brown sugar

The seasonings

  • 2-3 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 1 teaspoon white pepper
  • 1 teaspoon red pepper flakes

Garnishes

  • to taste sesame seeds
  • to taste green onions

Instructions

  1. Heat oil in a skillet and add chicken, cooking for 4-5 minutes until fully cooked.
  2. Whisk together the bourbon, soy sauce, ketchup, apple cider vinegar, chicken stock, cornstarch, and brown sugar to make the sauce.
  3. Add minced garlic, ginger, and white pepper to the chicken and cook for an additional 2-3 minutes.
  4. Pour the sauce over the chicken, bring to a boil, then reduce heat and simmer for 3-5 minutes until the sauce thickens.
  5. Add red pepper flakes and adjust sauce thickness with broth if needed.
  6. Garnish with sesame seeds and green onions, then serve over rice.
