Ingredients

The Bourbon Chicken Sauce

  • 3 cloves garlic
  • ½ teaspoon dried ginger
  • ¾ teaspoon crushed red pepper flakes
  • ¼ cup apple juice
  • cup light brown sugar
  • 2 tablespoons ketchup
  • 1 tablespoon bourbon (optional)
  • 1 tablespoon apple cider vinegar
  • ¼ cup water
  • cup soy sauce

The Bourbon Chicken

  • 1-2 tablespoons avocado oil
  • 2 pounds boneless, skinless chicken thighs

The Cornstarch Slurry

  • 1 tablespoon cornstarch
  • 1 tablespoon cold water

Instructions

  1. Whisk together all sauce ingredients in a medium bowl and set aside.
  2. Heat avocado oil in a large skillet over medium-high heat.
  3. Add chicken thigh pieces to the skillet and cook until lightly browned, about 2 minutes.
  4. Pour the sauce mixture into the skillet and stir gently.
  5. Bring the mixture to a boil, then reduce heat to medium-low and simmer for 10 minutes.
  6. Mix together cornstarch and cold water in a small bowl until fully combined.
  7. After 10 minutes, add the cornstarch slurry to the skillet and stir gently.
  8. Simmer for an additional 5 minutes or until the sauce has thickened.
  9. Divide the chicken and sauce into serving bowls and serve hot with rice.
