The Bourbon Chicken

boneless, skinless chicken thighs
The Cornstarch Slurry

Instructions
- Whisk together all sauce ingredients in a medium bowl and set aside.
- Heat avocado oil in a large skillet over medium-high heat.
- Add chicken thigh pieces to the skillet and cook until lightly browned, about 2 minutes.
- Pour the sauce mixture into the skillet and stir gently.
- Bring the mixture to a boil, then reduce heat to medium-low and simmer for 10 minutes.
- Mix together cornstarch and cold water in a small bowl until fully combined.
- After 10 minutes, add the cornstarch slurry to the skillet and stir gently.
- Simmer for an additional 5 minutes or until the sauce has thickened.
- Divide the chicken and sauce into serving bowls and serve hot with rice.
