Grilled Bourbon Chicken

low sodium or gluten-free soy sauce

unsweetened apple sauce

low sodium chicken broth

Instructions
- Pound the chicken breasts to an even thickness and place them in a Ziploc bag.
- In a bowl, mix soy sauce, apple sauce, onion, ginger, garlic, oil, bourbon, BBQ sauce, vinegar, brown sugar, and red pepper flakes. Reserve ⅓ cup of the marinade and refrigerate it.
- Pour the remaining marinade into the bag with the chicken and marinate for at least 30 minutes or overnight.
- Preheat the grill to medium-high heat, discard the marinade from the bag, and grill the chicken for 4 minutes on each side until cooked through.
- Transfer the chicken to a plate, cover with foil, and let it rest.
- In a saucepan, heat the reserved marinade with chicken broth until boiling, then reduce heat and simmer until slightly thickened.
- Slice the chicken, top with the sauce, garnish with scallions, and serve.
