Grilled Bourbon Chicken

Ingredients

The chicken

  • 2 pounds boneless, skinless chicken breasts

The marinade

  • ½ cup low sodium or gluten-free soy sauce
  • ½ cup unsweetened apple sauce
  • ½ cup finely chopped yellow onion
  • 2 teaspoons grated ginger
  • 4 cloves garlic, minced
  • 1 tablespoon canola oil
  • ¼ cup bourbon
  • ¼ cup BBQ sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • a pinch red pepper flakes
  • ½ cup low sodium chicken broth
  • to taste sliced scallions, for garnish

Instructions

  1. Pound the chicken breasts to an even thickness and place them in a Ziploc bag.
  2. In a bowl, mix soy sauce, apple sauce, onion, ginger, garlic, oil, bourbon, BBQ sauce, vinegar, brown sugar, and red pepper flakes. Reserve ⅓ cup of the marinade and refrigerate it.
  3. Pour the remaining marinade into the bag with the chicken and marinate for at least 30 minutes or overnight.
  4. Preheat the grill to medium-high heat, discard the marinade from the bag, and grill the chicken for 4 minutes on each side until cooked through.
  5. Transfer the chicken to a plate, cover with foil, and let it rest.
  6. In a saucepan, heat the reserved marinade with chicken broth until boiling, then reduce heat and simmer until slightly thickened.
  7. Slice the chicken, top with the sauce, garnish with scallions, and serve.
