Instructions
- Prepare the bourbon sauce by mixing soy sauce, bourbon, apple juice, rice vinegar, maple syrup, minced garlic, grated ginger, and paprika in a bowl.
- Clean and slice the chicken thighs into strips and pat them dry.
- Coat the chicken strips with cornstarch.
- Heat oil in a skillet over medium-high heat and cook the chicken strips until golden brown, about 6 to 8 minutes.
- Add the bourbon sauce mixture to the skillet and stir to coat the chicken evenly.
- In a small bowl, mix cornstarch with water and add to the skillet, stirring until the sauce thickens.
- Serve the chicken immediately, garnished with chopped scallions.
