Ingredients

The chicken

  • 1 ½ pounds boneless skinless chicken thighs
  • 1 ½ tablespoons canola oil
  • cup chopped green onions

The sauce

  • ¼ cup low-sodium soy sauce
  • ¼ cup bourbon
  • 2 tablespoons pure maple syrup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 teaspoons cornstarch, divided
  • ½ teaspoon ground black pepper

For serving

  • 2 cups prepared brown rice

Instructions

  1. Coat the chicken with 2 teaspoons of cornstarch.
  2. In a separate bowl, mix the sauce ingredients and remaining cornstarch.
  3. Heat oil in a skillet and cook the chicken until browned and cooked through.
  4. Add the bourbon sauce to the skillet and cook until thickened.
  5. Stir in green onions and serve hot over rice.
