Ingredients

The fruit

  • 2 large bananas, sliced thick
  • 2 cups sliced strawberries, sliced thick
  • ¾ cup blueberries
  • ¾ cup raspberries
  • 10-12 pieces wooden skewers

The chocolate drizzle and toppings

  • ½ cup semi-sweet chocolate chips
  • ½ tsp coconut oil
  • ¼ cup unsweetened shredded coconut
  • cup roasted salted almonds, finely chopped

Instructions

  1. Prepare all the fruit by slicing it and lining a dish or baking sheet with parchment paper.
  2. Melt the chocolate chips in a bowl in the microwave, stirring every 20 seconds, then mix in the coconut oil.
  3. Assemble the skewers by threading the fruit in the order of blueberry, banana slice, strawberry slice, blueberry, and raspberry, repeating this pattern and ending with a blueberry.
  4. Drizzle the melted chocolate over the assembled skewers and sprinkle with coconut and almonds.
  5. Store any leftovers in the fridge or freezer.
