Curried Ground Beef with Peas and Potatoes

Ingredients

  • 4 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 Tbsp cooking oil
  • 1 Tbsp curry powder
  • 1 tsp turmeric
  • ¼ tsp crushed red pepper (optional)
  • 1 lb. ground beef (15% fat or less)
  • 1 russet potato (¾ lb.)
  • 1 cup beef broth
  • 1 cup frozen peas
  • ½ tsp salt
  • 2 green onions, sliced (optional)

Instructions

  1. Sauté minced garlic and grated ginger in cooking oil for 1-2 minutes.
  2. Add curry powder, turmeric, and crushed red pepper, and sauté for one more minute.
  3. Add ground beef and cook until browned.
  4. Peel and cube the potato into ½-inch pieces.
  5. Add cubed potato and beef broth to the skillet, stirring to combine.
  6. Cover and bring to a boil, then reduce heat and simmer for 10 minutes.
  7. Remove the lid and simmer for a few more minutes until most broth is evaporated.
  8. Stir in frozen peas and heat through.
  9. Taste and add salt if necessary, then top with sliced green onions before serving.
