  • 2 tablespoons canola oil
  • 1 pound potatoes, peeled and diced into ¼-inch cubes
  • 1 pound 93% lean ground beef
  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1-2 teaspoons hot sauce
  • 2 green onions, sliced

For Serving

  • to taste non-fat plain Greek yogurt or sour cream
  • to taste shredded cheddar cheese
  • to taste cooked brown rice or cauliflower rice

Instructions

  1. Heat oil in a large skillet over high heat, then reduce to medium and add potatoes, cooking until golden and tender.
  2. Add ground beef, onion, and bell pepper to the skillet, breaking apart the meat as it cooks.
  3. Stir in Worcestershire sauce, mustard, smoked paprika, garlic powder, oregano, salt, pepper, and hot sauce.
  4. Continue cooking until vegetables are tender and meat is fully cooked, about 6 to 8 minutes.
  5. Stir in green onions, taste, and adjust seasoning as desired.
  6. Serve hot with desired toppings.
