Ground Beef Curry

Ingredients

  • 2 tablespoons canola oil
  • 1 medium onion, chopped
  • 1 tablespoon minced garlic
  • 1 teaspoon fresh ground ginger
  • 1 tablespoon curry powder
  • ½ teaspoon paprika
  • 1-2 whole chili pepper
  • 2-3 medium tomatoes, chopped
  • 2 cups diced potatoes
  • 1 pound ground beef
  • ½ teaspoon cayenne pepper (optional)
  • ½ teaspoon white pepper
  • 1 cup frozen peas, thawed
  • 2-3 tablespoons parsley or cilantro
  • Salt to taste
  • 1½-2 cups water

Instructions

  1. Heat oil in a skillet and sauté onions, garlic, ginger, curry powder, paprika, and chili pepper for 2-3 minutes.
  2. Add chopped tomatoes and cook for another 3 minutes.
  3. Mix in diced potatoes and ground beef, along with cayenne and white pepper.
  4. Pour in water, bring to a boil, then simmer for about 15 minutes until potatoes are tender.
  5. Stir in peas and cook for an additional minute or two, then add parsley and adjust seasoning.
  6. Remove from heat and let cool, can be prepared a day in advance.
