Easy Curry Beef Bowls

Instructions
- Combine the seasonings in a small bowl and set aside. Chop the shallot.
- In a large skillet over medium heat, add coconut oil. Once melted, add beef and shallot, breaking up the beef as it cooks for about 6-7 minutes.
- Add the seasoning mix and stir to combine. Then add the tomato paste and stir for 1 minute.
- Pour in the coconut milk and bring to a rapid simmer. Reduce heat to medium-low, cover, and simmer for 3-4 minutes until the beef is cooked through.
- Assemble the bowls starting with a bed of greens, add cauliflower or white rice, top with the beef mixture, and sprinkle with chopped parsley.
