Ingredients

The base

  • 1 tbsp Olive oil
  • 1 lb Cauliflower (frozen or fresh riced)
  • ½ tsp Sea salt
  • tsp Black pepper

The beef

  • 1 tbsp Olive oil
  • 1 lb Ground beef
  • ½ tsp Sea salt
  • 4 cloves Garlic (minced)
  • ¼ cup Coconut aminos
  • ¼ cup Beef broth
  • 2 tsp Sesame oil
  • ¼ tsp Ground ginger
  • ¼ tsp Crushed red pepper flakes

Toppings

  • ¼ cup Green onions (sliced)
  • 1 tsp Sesame seeds
  • 1 small Cucumber (~8 ounces, sliced)

Instructions

  1. Heat olive oil in a large wok or skillet and cook cauliflower rice until tender, then transfer to bowls.
  2. In a small bowl, whisk together coconut aminos, beef broth, sesame oil, ground ginger, and red pepper flakes.
  3. Add olive oil to the pan, then add ground beef and season with sea salt. Cook until browned.
  4. Push beef to the sides and sauté minced garlic until fragrant, then mix with the beef.
  5. Pour the sauce over the beef, bring to a boil, then simmer until the sauce is reduced.
  6. Assemble the bowls by topping cauliflower rice with ground beef, cucumber slices, and garnish with green onions and sesame seeds.
